Ingredients | Swiss Ingredients¼ cup butter¼ cup all-purpose flour1 teaspoon salt4 cups milk1 teaspoon mustard, or to taste1 ½ pounds Baby Swiss cheese, gratedDirectionsMelt butter in a saucepan over low heat. Whisk flour and salt into butter until mixture is smooth and bubbly, about 1 minute. Remove from heat and whisk milk into butter mixture.Bring mixture to a boil, whisking constantly; cook at a boil for 1 minute.
